I've decided 2010 is the year it will happen! I'm going to lost 30 pounds and keep it off for good. We are trying to become pregnant, and I need to be as healthy as I can. My hopes are that by blogging every day, I can keep track of working out, and eating better. To help me be more accountable as to what I eat, I have decided to take a picture of every meal, and snack I eat, and post it every night. I love to cook, so I'll be adding lots of yummy, healthy recipes I try.

Day 4

Started my day off with going to the gym. I did 20 minutes on the elliptical, and free lifted some light weights.

Breakfast. Quaker Simple Harvest Oatmeal with a banana sliced on top. It was good!

Lunch. Chicken Curry. I boiled some chicken breasts, and made curry sauce. I also had an apple.

Snack. Had about 10 Wheat Thins

Dinner. Personal chicken enchiladas. Whoever knows me, knows I LOVE mexican food!!!I was mad craving something mexican. I used whole wheat low carb high fiber tortillas. Um, honestly, they sucked. Totally tasted waaaaay too healthy. but hey, how else am I going to lose weight, right? Ok. so I put a small layer of beans down (they were 98% fat free) and topped it with shredded chicken that I boiled. I cooked some onions and threw that on top the chicken. I sprinkled a little colby jack cheese on top of the chicken and onion. Finally I put the tortillas on. Sprinkled a little more cheese on top. And added olives. It was pretty good. My husband really liked it. I suppose the only unhealthy part of this meal was cheese. but hey, what's life without cheese? It wasn't much, so I guess it wasn't too bad.

We watched "The Hurt Locker" and I had a 100 calorie smart pop popcorn.

Day 3

Let me just start off by saying how proud of myself I am!!! Last night, I watched the food network just about till midnight. And OOOOOOHHHHHH did it make me hungry for junk!! But instead of eating anything, I got up and made some peppermint tea and drank that. I didn't even add honey to it. I think that is the hardest part about changing the way I eat. I always have the food network on, and I am ALWAYS getting up to snack while watching it. Man, I hope (No, I WILL) keep this up. Did 20 minutes on the elliptical at the gym. I really want to use the other equipment, but I don't want to do it wrong and have everyone laughing at me behind my back. lol.

Breakfast: So, bad, I know, but it was skipped. After doing a quick workout, I headed for the main base to take care of some stuff at the animal shelter I volunteer at.

Lunch: haha.. Chicken Ceaser Salad from Costco. ( I needed to grab fresh chicken, and bt the time I got to Costco, I was starving... so I went for the best thing on the menu. And to drink, instead of Coke Zero, I chose oolong tea. YUM, definitely one of my top three Japanese teas. I didn't eat the whole thing, it was pretty big.

Snack: Healthy and yummy. An orange and Special K multi grain crackers

Dinner. Chicken lettuce wraps. TOTALLY HEALTHY! My hubby cooked the chicken on the grill.YUM. So, all it was was lettuce, red onion, tomato, olives, and low fat honey mustard. I had 4. I was having a bit of a sweet tooth, so I had a A&W Diet Root Beer... my favorite!

Day 2

DOWN TWO POUNDS from yesterday... YAY!!!It was a rainy day and I didn't quite make it to the gym, but I did do 20 minutes on the elliptical here at home. But hey, something is better than nothing. I think I did well overall today. Actually, I am very proud that I didn't eat any junk food.

Breakfast. Mixed fruit yogurt. It was SOOO good. It had chunks of fruit like grapes, pineapple, and mandarin oranges. I put 1/2 cup of granola on top. I also had the BEST COFFEE drink EVER!!!!! YUM!

Lunch. Lean Cuisine chicken enchilada and rice. It's my favorite lean cuisine. It has a creamy, kind of like, sour cream/ cilantro sauce. mmmm.

snack. Special K whole wheat crackers with "port wine cheese".

Dinner. White rice, Salmon, and Carrots. The carrots I just steamed in the steamer and added dill and 1 tsp. butter.... which is a lot healthier then cooking them in butter. The salmon was very simple. I just put a little olive oil on the top and salt and pepper. I wrapped it in foil and baked in the over at 400 for 20 minutes. It was really good! I had two glasses of white Merlot... bad, i know, but I haven't had any wine, or other alcohol in about a month. It was long overdue. now i'm feeling slightly tipsy as I type. haha.

Day 1

Not too bad of a day. I went to the gym at 8:15 and stayed about an hour. I think breakfast and lunch went good. I didn't snack until tonight when I was waiting for dinner to cook. I was hoping to do something healthier for dinner. But I had to teach english tonight at a japanese school, and didn't have time to make a healthy dinner. when I got home at 7, that was the only thing in our fridge. Ugh, I SO need to go to the grocery store!!

So, Breakfast . Blueberry Yogurt (japanese) and 1/2 cup Quaker Granola

Lunch. 6inch turkey sub on whole grain from Subway. Had american cheese, low fat honey mustard, tomato, lettuce, onion, and olives.

A friend brought over some peanut butter girl scout cookies. They were out on the counter and I was so hungry!! I ate 4. Bad, I know!!!!!! they are small cookies, but still... i was trying not to snack.

Dinner. Ok. There is a lot of pasta on that plate... but I swear I only ate half. Anyways, its mozzarella and spinach ravioli. ( from Costco) and I made a creamy tomato sauce to top it.
